PEANUT BUTTER BANANA MUFFINS
This is my last recipe in partnership with Chantal Organics! I have had so much fun creating recipes out of their amazing range of products. Here are my Peanut butter, banana muffins! They are so healthy, perfect for on the go in the morning, in the school/work lunch boxes or as a snack to get you from meal to meal. Everyone loves these, including picky toddlers.
So easy to whip up at the end of the day, so they are ready for the rush of the following morning. Enjoy!!
Ingredients :
1 cup Chantal organics plain four
1 cup Chantal organics whole wheat flour
1 cup Chantal organics whole wheat flour
3 tsp baking powder
Pinch of salt
1 tsp Chantal organics cinnamon powder
1 tsp Chantal organics maca powder
1/4 Chantal organics smooth peanut butter
1/3 Chantal organics coconut oil ( melted)
2 Ripe bananas (mashed)
1 1/2 cups almond milk
4 Tbsp Chantal organics brown rice syrup

Method :
Preheat oven to 180C.
Mix together flours, baking powder, salt, cinnamon and maca powder in a bowl.
In a seperate bowl beat milk, mashed bananas and brown rice syrup until combined.
Add melted coconut oil and peanut butter into wet ingredients and mix until combined.
Add wet ingredients into flour mixture and fold in gently.
Spoon batter into muffin tins or muffin cups.
Bake for 15-20mins or until golden brown.
Drizzle with brown rice syrup and peanut butter!!
