quinoa brown rice pumpkin salad
This salad is super easy, healthy and delicious. You can make a huge batch on Sunday night and it will last you the whole week. This is the kind of easy meal prep I love! Enjoy
Recipe :
Ingredients -
Half pumpkin (cubed and roasted in oven)
1 cup quinoa
1 cup brown rice ( I used Uncle Ben's microwave packets, another short cut!)
1 cup Kale (chopped)
1 cup baby spinach
1 stem spring onion
1 large tomato
Throw all ingredients into container, and your all done!!! Serve with any dressing you like!
