ROAST SWEET POTATO SALAD WITH MISO, GINGER AND LEMON DRESSING

Roast Sweet Potato Salad with Miso, ginger and lemon dressing

We are all about the salads at the moment. This is the perfect healthy dish to add to your BBQ.


Ingredients : Serves 4-6 people

2 Kumara
3 large handfuls of baby spinach or baby kale
1/3 red onion, finely sliced
1/2cup toasted pumpkin seeds
1/3cup toasted sesame seeds
1tbsp miso paste
2tbsp Extra virgin olive oil
Salt and pepper
Coriander or Basil to garnish.

Dressing:

2tbsp Miso paste
Juice of one lemon
Zest of one lemon
3 cloves of crushed garlic
1 tsp crushed ginger
1/2 tsp sugar (coconut sugar or brown sugar)
1/3cup olive oil

Method :

Cut up kumara into small cubes. Place kumara in a bowl and toss in the olive oil, miso paste and salt and pepper. Place on a baking tray and into a oven preheated to 200degrees for around 25mins or until golden.
Meanwhile, finely slice the red onion, and toast the pumpkin seeds and sesame seeds in a frying pan on medium heat until golden and fragrant. Take off heat and place in a bowl.
To make the dressing. Place all the ingredients in a bowl and whisk until smooth.
To assemble, place roasted kumara, spinach, red onion and toasted seeds in a bowl, pour over the dressing and toss until combined. Garnish with your favourite herb! I like to use coriander or basil.
