BLT WITH EGGPLANT BACON
RECIPE -
Eggplant bacon : for each sandwich you only need about 3-4 slices, but this will make 4 sandwiches.
Eggplant
1 1/2 tbsp Maple syrup
1/4 cup Tamari
1/4 cup Water
2 tsp paprika
1/2 Tbsp liquid smoke
Cut eggplant into 1/4’s vertically. Carefully slice each 1/4 length ways till you have long thin pieces of eggplant.
Mix all the wet ingredients in a bowl and add the prepared eggplant slices.
Make sure all of the eggplant is coated evenly, then lie on a lined baking sheet and place in 180C oven for 10-15mins.
Sandwich ingredients : Recipe for one sandwich
2 slices tomato
Red onion
Lettuce
Onion relish
Avocado
Wholegrain bread
Angel Food dairy free cheddar cheese.
Lay out the two pieces of bread on a baking tray. Cut the Angel Food diary free cheddar cheese into slices. Place 3 slices onto one of the pieces of bread. Put these in the oven 180C for around 5-10mins so that the cheese melts and the bread toasts.
Once taken out of the oven, layer the sandwich.
Spread some onion relish on, layer the tomato, red onion, lettuce, avocado and eggplant bacon.
Press together and enjoy! Serve with some chips for that authentic BLT experience.
