'Pulled Pork' Loaded Texas Fries
My love for pulled pork before I went vegan had diminished but now its back in full force! Jackfruit pulled pork is amazing, you could fool anyone that it was real meat!!! It soaks up all the flavour of whatever you put in it and if you wanted a more crisp texture, then after cooking, put it in a clean pan with oil and cook for 5 min on high heat. This would take it to the next level! But also increase the fat content, which ever one you decide to go with I'm sure you will love!!

Ingredients -
1 tin of jackfruit (not in syrup that is the sweet stuff and we want it to be savoury)
5 potatoes cut into wedges
1/2 cup BBQ sauce (make sure it is vegan)
2 stalks of spring onion to garnish
Aioli :
1/2 cup raw cashews (soaked over night or in boiling water for 30mins)
2 tsp apple cider vinegar
2 tsp garlic powder
1 tsp maple syrup
pinch of salt
Method :
Drain jackfruit and cook in saucepan on medium heat adding 1.5cup of water to begin with. Add garlic powder and cover for about 30 mins. You must check the jackfruit every 5mins to check if water as been absorbed, keep adding water so it does not stick the pan. In the end I added around 4-6cups of water but this will depend on what brand of jackfruit you use and what you are cooking it in/ the heat. You want to achieve a ‘pulled pork’ texture so adding moisture and heat over a period of 30 mins will ensure this.
After 30 mins check jackfruit, and take off heat. All the water should be absorbed and the jackfruit should be tender.
Mash the jackfruit until it resembles pulled pork.
Add BBQ sauce and 3/4 cup water, place back on heat for about 10mins to let the bbq sauce caramelise and for it to become a bit sticky.
Place the potato wedges on baking paper and in the oven for 20-25 mins. No oil is needed for this, but you may season them or add herbs.
For the aioli, place all the ingredients in a blender. I found that i needed to add about 1/4 cup water just to help things process and become a bit smoother.
Assemble the fries on a plate and place the jackfruit on top, drizzle over the aioli and sprinkle with the spring onion.
This tastes like it is sooo unhealthy yet it unbelievably isn’t!!! So tasty and filling.
