Avocado pea pesto pasta



This is the second recipe as part of my 'cheap eats' series. I love pesto pasta, but buying nuts is really expensive, especially if you want to make for a group of people. Once I spent 17$ at the supermarket on pine nuts for pesto, and I just can't fathom doing that again!!!
This sauce is a smooth, creamy pesto and will feed about 4 people. I only used half an avocado, but if you are somewhere in the world where avocados are cheap, then you are more than welcome to put a whole one in! But it tastes good either way. Enjoy!

Ingredients -

300g spagetti pasta (feeds about 4 people)
half an avocado
3 cloves of garlic
juice of half a lemon
handful of fresh basil
1/2 frozen peas
season with salt to taste
1/2 cup sundried tomatoes

Cook spaghetti according to the packet instructions. Before you drain the pasta, save one cup of water that it has been cooking in, we use this later to add to sauce.

Place avocado, lemon juice, garlic, basil and frozen peas in a blender or food processor and blend until smooth. Taste and add salt as desired.

Gently mix pesto and cup of pasta water through cooked pasta, and your done!!! So simple!

You can add sundried tomatoes on top of each dish to garnish or mix them through.
A swig of olive oil and some basil goes nicely too!
