GREEK BAKED BEANS





Another perfect breakfast recipe. I couldn't believe the amount of flavour the thet beans had. I have made baked beans many times before but this was my best yet. The addition of the spices and organic ingredients from Chantal Organics made this even more decadent and scrumptious than ever. I loved the greek twist, with the olives and the coconut yogurt on top (plain, unsweetened) and the crusty ciabatta was the perfect companion. 
Another great recipe to make the night before, and will keep for a round 5 days. Super healthy and great way to fuel yourself for the day.  This recipe will feed 3 people. Enjoy!



Ingredients :

1 can Chantal Organic chopped tomatoes
1 can Chantal Organic Chickpeas
1 tbsp Chantal Organic tomato paste
1 tsp crushed garlic ( or about 1-2 cloves)
1 tsp Chantal Organic coconut oil
1 tsp Chantal Organic chilli flakes
1 tsp Chantal Organic cinnamon
2 tsp Chantal Organic brown rice syrup
salt and pepper to season


Method :

In a pan, on medium heat, fry garlic in coconut oil for a few minutes until, stirring to prevent burning. Add in cinnamon and chilli flakes, continue to stir for a few mins.
Add in drained and rinsed chickpeas. Stir and coat with the oil and spices. 
Add in chopped tomatoes tomato paste and brown rice syrup. 
Simmer for 20mins to let flavours combine. Season with salt and pepper.
Turn off heat and let it cool for a remaining 10-20 to really let the flavours infuse. 

Serve with crusty ciabatta, olives and parsley coconut yoghurt.
