SUMMER NACHOS






Nachos are a crowd favourite. So why not include Angel Food's cheese sauce and cheddar cheese? This really lifts these vegan nachos and is a low cost option, instead of making a cashew cream sauce! The cheese sauce mix makes a many batches. You can use 1/2 cup at a time and keep the rest in your pantry. The cheddar cheese is also amazing, and a great price. It melts perfectly on top. Spruce the classic nachos up with some fresh tomatoes, onion and coriander on top, and of course avocado. Enjoy!


Ingredients : Serves 5 people

1 bag of plain corn chips
1/2 can black beans
1/2 can corn kernels (no added salt or sugar)
1 cup pasta sauce 
1/2 cup Angel food cheese sauce mix 
2 cups Almond milk 
Angel food dairy free cheddar cheese 

Topping :

10 cherry tomatoes halved
1/4 red onion chopped
2 spring onion stalks chopped
handful of coriander
1/2 avocado 

Method :

Place corn chips in a shallow lined baking tray. Layer black beans and corn. Follow Angel Food cheese sauce mix packet instructions (using the almond milk). Pour over the cheese sauce, then the pasta sauce. Grate over Angel food dairy free cheddar cheese ( as much as you desire). 
Place in preheated 180C oven for about 15mins or until cheese has melted. 

Once removed from the oven, layer the tomatoes, onion, spring onion, coriander and avocado on top. I have added rough measurements but add as much of each topping as you like.
