VEGAN BRUSCHETTA




















Mozzarella Bruschetta


Ingredients : Makes 5 medium/large pieces of Bruschetta


10 slices of Angel Food’s Mozzarella
5 slices of ciabatta 

Topping - 

1 cup halved cherry tomatoes (mixed colours for visual effect)
1/2 cup basil chopped/ripped
1/4 finely chopped red onion
1 Avocado diced 
1 Tbsp Extra virgin olive oil
1 Tbsp balsamic vinegar
salt and pepper to season


Method :

Place ciabatta slices on baking tray, top with two slices of Angel Food’s Mozzarella on top of each piece. Place in oven and grill for approx 5-10mins. Keep a close eye to prevent burning.
Bread should come out crisp and golden and cheese should be bubbling. 

For the topping, mix together all the ingredients in a bowl and season to taste. Stir gently. 

Spoon topping onto crisp bread and serve immediately. Enjoy!
