SRAMBLED TOFU





For the past few months I have been obsessed with 'tofu scramble'. It is now my go to Saturday/Sunday brunch. I serve it with avocado, tomato, crisp sourdough/multigrain bread, relish, spinach, mushrooms and hummus! It is so delicious and super easy to cook, only a few ingredients and you are ready to roll.
Perfect healthy substitute for eggs. Tofu contains omega 3, magnesium, phosphorus, selenium, zinc, calcium, copper, iron, potassium, lots of protein and zero cholesterol!
It keeps you full and satisfied, without making you feel sluggish.

Recipe :

Ingredients :

1 Block of firm tofu
2 tsp Nutritional yeast ( if you don't have this it isn't essential! Just adds a cheesy taste)
Juice of half a lemon
1 tsp Garlic powder
1/2 tsp Turmeric
1/2 tsp Maple syrup
Salt to season
1 tbsp Water

Garnish (optional):

Chilli flakes
Spring onion
Parsley

Method :

Crumble/break tofu in a non stick pan over medium heat. Make sure it is all broken up into small bits (to resemble scrambled eggs). Add all the ingredients and mix together so that the tofu becomes a light yellow colour. Cook for around 10 mins so that flavours are all combined and tofu is heated through! Serve on top of crispy bread.

You can add different ingredients to your scramble. I switch it up from time to time, adding black beans, cherry tomatoes, capsicum, mushrooms, onion, herbs. Whatever I have in the fridge !
It is very versatile.
